Pasta with Almond & Basil Pesto

Almonds supply good amounts of fibre and minerals as well as plenty of vitamin E.
300g fusilli, radiatore or wagon wheel pasta
4 cloves garlic, peeled
2 cups packed fresh basil leaves
2/3 cup chicken stock
1/2 cup whole almonds, toasted
1/3 cup grated Parmesan cheese
- Cook the pasta in a large saucepan of boiling water according to the packet directions, until firm-tender. Drain.
- Meanwhile, put the garlic, basil, stock and almonds in a food processor and purée. Transfer to a large bowl and stir in the Parmesan. Add the hot pasta to the bowl, tossing to combine.
