Pasta with Almond & Basil Pesto

Almonds supply good amounts of fibre and minerals as well as plenty of vitamin E.

Serves: 4 

  • 300g fusilli, radiatore or wagon wheel pasta
  • 4 cloves garlic, peeled
  • 2 cups packed fresh basil leaves
  • 2/3 cup chicken stock
  • 1/2 cup whole almonds, toasted
  • 1/3 cup grated Parmesan cheese

Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

  1. Cook the pasta in a large saucepan of boiling water according to the packet directions, until firm-tender. Drain.
  2. Meanwhile, put the garlic, basil, stock and almonds in a food processor and purée. Transfer to a large bowl and stir in the Parmesan. Add the hot pasta to the bowl, tossing to combine.
