Pasta Salad with Tomatoes and Caramelised Onions

Sweet caramelised onions, gently roasted cherry tomatoes and fresh basil ensure that this pasta salad will become a favourite.

Ingredients
Serves: 6 

  • 1 punnet cherry tomatoes, about 250 g
  • 3½ tablespoons olive oil
  • 1 garlic clove, sliced
  • salt and freshly ground black pepper
  • 350 g penne
  • 2 onions, sliced
  • 1 tablespoon balsamic vinegar
  • 3 teaspoons light brown sugar
  • 1 small bunch basil, torn
  • ½ cup finely grated parmesan
  • ¼ cup pine nuts, toasted

Directions

  1. Preheat the oven to 180°C. Put the tomatoes on a baking tray and gently toss with ½ tablespoons of the olive oil, the garlic and a little salt and pepper. Cook the tomatoes for 12–15 minutes, or until just softened.
  2. Meanwhile, cook the pasta in a large saucepan of lightly salted boiling water for 10–12 minutes, or according to the packet instructions, until al dente. Drain well.
  3. At the same time, heat the remaining oil in a frying pan over a moderate heat. Add the onions and cook, stirring occasionally, for 8–10 minutes, or until golden. If the onions are browning too quickly, reduce the heat slightly, especially as it reaches the end of cooking time. Add the balsamic vinegar and sugar, and stir for 1 minute.
  4. Toss the pasta, roasted tomatoes, caramelised onions, basil leaves, parmesan and pine nuts in a large bowl. Season to taste. The pasta can be eaten straight away, but is just as good at room temperature.

cook's tip

The tomatoes, onions and even the pasta can be cooked in advance. Just before tossing them together, gently warm the onions in the microwave oven – this will not only take the chill off them, but will intensify the flavours.
