This is a classic recipe of beans and macaroni in a tomato based soup. Very warm and comforting with crusty bread.


Serves: 8 

  • 1 onion, sliced
  • 3 tablespoons olive oil
  • 2 cloves garlic, crushed
  • 700g Italian tomato pasta sauce
  • 5 cups water
  • 2 tablespoons chopped parsley
  • 2 tablespoons chopped basil
  • 1 tablespoon chopped oregano
  • 1 teaspoon salt
  • 400g canned cannellini beans, drained
  • 400g canned haricot beans, drained
  • 30g grated parmesan
  • 500g macaroni pasta

Preparation:5min  ›  Cook:1hour10min  ›  Ready in:1hour15min 

  1. In a large stock pot over medium heat, cook onion in olive oil until soft. Stir in garlic and cook until soft.
  2. Reduce heat and stir in tomato sauce, water, parsley, basil, oregano, salt, cannellini beans, haricot beans and parmesan. Simmer 1 hour.
  3. Cook macaroni according to packet instructions; drain and stir into soup.
