1 large ripe tomato, seeded and diced
1/2 red onion, finely chopped
2 tablespoons chopped fresh parsley
2 tablespoons lime juice
Freshly ground pepper
Salt
2 dozen oysters, freshly opened

Combine the tomato, onion, parsley, lime juice, a good grinding of pepper and a pinch of salt in a medium bowl. To serve, top each oyster with 1 teaspoon of the salsa.
