Oysters with tomato salsa

Mussels, oysters and scallops are prime sources of vitamin B12, which your body needs in order to utilise folate. They are also rich in minerals, including zinc and iron.
1 large ripe tomato, seeded and diced
1/2 red onion, finely chopped
2 tablespoons chopped fresh parsley
2 tablespoons lime juice
Freshly ground pepper
2 dozen oysters, freshly opened
- Combine the tomato, onion, parsley, lime juice, a good grinding of pepper and a pinch of salt in a medium bowl. To serve, top each oyster with 1 teaspoon of the salsa.
