This delicious dish, made from carrots and oranges, is a great way to get your vitamin C. Simple to make with only four ingredients.
500g baby carrots, peeled
1⁄4 cup (60ml) orange juice
2 tablespoons orange marmalade or apricot jam
2 teaspoons unsalted butter
- In saucepan with a steamer insert, cook carrots over water until crisp-tender.
- In large frying pan, heat orange juice, marmalade or apricot jam and butter.
- Add carrots and cook over moderate heat until nicely glazed.
