1 medium red onion, sliced into thin rings
1 large, ripe but firm mango
2 kiwifruit, peeled and thinly sliced into rounds
1 small cucumber, thinly sliced
Chilli lime dressing
1 fresh red chilli, seeded and finely chopped
2 tablespoons olive oil
2 tablespoons lime juice
1 teaspoon clear honey
2 tablespoons chopped fresh coriander leaves
salt and freshly ground black pepper

Slice onion rings in half. Place in a shallow dish. To make chili lime dressing, combine all the dressing ingredients in a screw–top jar. Shake well to combine. Stir dressing into onion rings; marinate 30 minutes.
Slice flesh from mango, cutting down each side of the stone. Peel away skin and cut flesh into thin slices.
Add mango, kiwifruit and cucumber to marinated onion and dressing. Combine gently to avoid breaking up the fruit.

If you find the taste of coriander too pungent, try using chopped fresh mint. * Add 2 large, ripe, thinly sliced plums to the salad and use 2 large segmented oranges instead of the mango.
