A delicious guilt free banana bread, which is also a great way to use up overripe bananas. You can add nuts too if you like.

Ingredients
Serves: 12 

  • 1 1/2 cups (200g) plain flour
  • 2/3 cup (150g) caster sugar
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon bicarb soda
  • 1/2 teaspoon ground cinnamon
  • 2 egg whites, whisked
  • 3 ripe bananas, mashed
  • 4 tablespoons apple purée

Directions
Preparation:10min  ›  Cook:55min  ›  Ready in:1hour5min 

  1. Preheat oven to 180 degrees C. Lightly grease a loaf tin about 20 x 10cm.
  2. In a large bowl, stir together flour, sugar, baking powder, bicarb soda and cinnamon. Add egg whites, bananas and apple purée; stir just until combined. Pour batter into prepared tin.
  3. Bake for 50 to 55 minutes, until a toothpick inserted into centre of loaf comes out clean. Turn out onto wire rack and allow to cool before slicing.

Used different ingredients. i add a tsp of vanilla essence, and 1/4 tsp of salt - 27 Feb 2010
