Nectarines are good sources of beta-carotene, vitamin C, niacin and potassium. They also supply some fibre and, gram for gram, contain more potassium than a navel orange.
4 nectarines or peaches
1 tablespoon lemon juice
1 tablespoon sugar
1/2 cup reduced-fat sour cream
1/3 cup firmly packed brown sugar
- Preheat the oven to 180°C. Cut the nectarines into thin wedges and toss with the lemon juice and sugar. Spoon into a 20 cm gratin dish or small baking dish and bake for 10 minutes.
- Preheat the griller. Top the nectarines with the sour cream and sprinkle with the brown sugar. Grill for 5 minutes or until the sugar is melted and bubbly.
