Chicken Salad with Almonds

    This is a super simple salad with only six ingredients but it is so satisfying! A great use for leftover chicken.

    Serves: 2 

    • 60g blanched slivered almonds
    • 4 tablespoons mayonnaise
    • 1 tablespoon lemon juice
    • freshly ground black pepper to taste
    • 315g cooked chicken meat, chopped
    • 1 stick celery, chopped

    Preparation:5min  ›  Cook:5min  ›  Ready in:10min 

    1. Place almonds in a non stick frying pan. Toast over medium-high heat, shaking frequently. Watch carefully, as they burn easily.
    2. In a medium bowl, mix together mayonnaise, lemon juice and pepper. Toss with chicken, almonds and celery. Serve atop lettuce leaves or in a sandwich.

    As written, this recipe is pretty tasteless. I wouldn't serve it as-is. It IS a pretty good base though, as far as achieving a decent chicken salad consistency. You could go several ways with the seasoning in this to make a great chicken salad. I ended up adding onion powder, garlic powder, minced onion, sriracha, cumin, paprika, and a little splenda and it turned out very well.  -  14 May 2013


    This is great chicken salad. It's simple, but with lots of flavor. I make it all the time when it's too hot to cook. I just bake the chicken or boil it in broth, then dice it up. I've made it with a variety of different nuts - pecans, walnuts - and low-fat mayonnaise. It always tastes wonderful!
