Chicken Salad with Almonds

    This is a super simple salad with only six ingredients but it is so satisfying! A great use for leftover chicken.

    • 60g blanched slivered almonds
    • 4 tablespoons mayonnaise
    • 1 tablespoon lemon juice
    • freshly ground black pepper to taste
    • 315g cooked chicken meat, chopped
    • 1 stick celery, chopped

    1. Place almonds in a non stick frying pan. Toast over medium-high heat, shaking frequently. Watch carefully, as they burn easily.
    2. In a medium bowl, mix together mayonnaise, lemon juice and pepper. Toss with chicken, almonds and celery. Serve atop lettuce leaves or in a sandwich.
