Moroccan Carrot and Potato Salad

    This is a quick and easy recipe for vegetarian moroccan style carrot and potato salad. It is great as a side or you could serve is a main meal.

    Serves: 4 

    • water
    • 2 potatoes, diced
    • 4 medium carrots, thickly sliced
    • Dressing
    • 2 teaspoons olive oil
    • 1 teaspoon ground coriander
    • 1 teaspoon ground cumin
    • 1⁄4 teaspoon ground ginger
    • salt, to taste
    • 2 tablespoons lemon juice
    • 4 tablespoons finely diced coriander leaves

    1. In a medium sized saucepan bring water to boil then add the potato and carrots. Cook for 5-8 minutes, or until softened slightly.
    2. Place carrot and potato in a food processor, process until roughly chopped. Transfer to a serving dish.
    3. Dressing: In a non-stick frypan over medium heat, add oil, coriander, cumin, ginger and salt. Cook until fragrant; about 2 min.
    4. Add the cooked spice blend to the lemon juice and fresh coriander then mix well. Coat the vegetables with the dressing then serve.

    Delicious! Easy to put together! Quite distinctive taste! Instead of running the vegetables in a blender, I just chopped them to begin with. This is great hot or cold!  -  29 Nov 2014
