My two-year-old loves these high-fibre muffins, but they make a healthy and tasty snack for anyone at any age!

Ingredients

125g wholemeal plain flour
125g wheatgerm
160g wheat bran
60g rolled oats or oat bran
2 teaspoons baking powder
2 teaspoons bicarbonate of soda
2 teaspoons ground ginger
3 tablespoons vegetable oil
1/2 cup honey
1 cup skim milk
250ml low-fat plain yoghurt
2 eggs, beaten
185g sultanas

Preparation method

1. Preheat oven to 180 C . Lightly grease a 12 cup muffin tin.
 
2. In a medium bowl, mix wholemeal flour, wheatgerm, bran, oats, baking powder, bicarbonate of soda and ground ginger.
 
3. In a separate bowl, thoroughly blend oil, honey, milk, yoghurt and eggs. Mix in sultanas.
 
4. Gradually fold milk and sultana mixture into the flour mixture until just moistened. Spoon into the prepared muffin pan.
 
5. Bake 20 to 25 minutes or until a toothpick inserted in the centre of a muffin comes out clean.
