Mixed Salad Greens with Avocado

    This salad plays with contrasting spring flavors--piquant lemon vinaigrette creamy avocado, and a mixture of sweet and sharp greens.

    Serves: 4 

    • 1 tablespoon olive oil
    • 1 tablespoon lemon juice
    • 1 teaspoon Dijon mustard
    • pinch of salt
    • 350 g mixed salad greens, such as iceberg, radicchio and rocket
    • 1 medium red onion, thinly sliced
    • 1 large avocado, peeled and diced

    1. Whisk oil, lemon juice, mustard and salt in a serving bowl until combined.
    2. Add salad greens and red onion. Toss well to coat with dressing. Add avocado; toss to combine.
