1 tablespoon olive oil
1 tablespoon lemon juice
1 teaspoon Dijon mustard
pinch of salt
350 g mixed salad greens, such as iceberg, radicchio and rocket
1 medium red onion, thinly sliced
1 large avocado, peeled and diced

Whisk oil, lemon juice, mustard and salt in a serving bowl until combined.
Add salad greens and red onion. Toss well to coat with dressing. Add avocado; toss to combine.
