If you are looking for a quick and easy vegetable curry this is the perfect recipe that can be used as a vegetarian main or a simple side dish as part of a larger meal.

Serves: 5 

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, crushed
  • 2 1/2 tablespoons curry powder
  • 2 tablespoons tomato purée
  • 1 (400g) tin diced tomatoes
  • 1 vegetable stock cube
  • 285g frozen mixed vegetables
  • 1 1/2 cups water
  • salt and pepper, to taste
  • chopped fresh coriander, to garnish

Preparation:5min  ›  Cook:25min  ›  Ready in:30min 

  1. Heat oil in a large saucepan over medium heat. Add onion and garlic then cook until golden.
  2. Stir in curry powder and tomato purée, cook 2 to 3 minutes.
  3. Stir in tomatoes, stock cube, mixed vegetables, water, salt and pepper to taste. Cook approximately 20 to 30 minutes until vegetables are cooked. To serve, sprinkle with coriander.
