Blueberry Mousse

    This is a very yummy blueberry mousse recipe that is easy to prepare and even easier to eat. This is a great summer dessert recipe when there are lots of spare blueberries to be eaten.

    Serves: 4 

    • 2 cup fresh bluberries
    • 1/4 cup lemon juice
    • 1/2 teaspoon ground ginger
    • 2 tablespoons sugar
    • 1/2 cup water
    • 1 packet gelatine
    • 1/2 cup sour cream

    1. Purée the blueberries with the lemon juice and ginger in a food processor.
    2. In a saucepan combine the sugar and water and bring to the boil. Stir the gelatine into the sugar mixture and heat until the gelatine is dissolved.
    3. Add the gelatine mixture to the blueberry purée and process until well combined. Combine the sour cream and the puree to create a smooth even coloured mousse.
    4. Spoon the mousse into individual serving glasses. Cool for 2 hours in the refrigerator.
