Mango and berry shake

    Made with mango, rockmelon, berries and soy milk, and full of vitamin C, beta-carotene, fibre and antioxidants, this shake is also low in saturated fat.

    Serves: 4 

    • 1 large mango (about 500 g), peeled, stoned and cut into wedges
    • 2 cups rockmelon chunks
    • 300 g frozen unsweetened raspberries
    • 1 1⁄2 cups (375 ml) soy milk
    • 2 tablespoons fresh lime juice
    • 2 tablespoons honey
    • 1 teaspoon vanilla extract
    • 1 teaspoon ground ginger

    1. Working in 2 batches, combine the mango, rock-melon, raspberries, soy milk, lime juice, honey, vanilla and ginger in a blender. Blend until smooth.
