    Bacon, lettuce and tomato (BLT) are the foundations of this tasty salad but the recipe also includes avocado, chicken and celery.

    Serves: 6 

    • 5 slices bacon, diced
    • 3/4 (185g) mayonnaise
    • 1 tablespoon chopped fresh parsley
    • 2 tablespoons chopped spring onion
    • 1 teaspoon fresh lemon juice
    • 1/2 teaspoon Worcestershire sauce
    • salt and freshly ground black pepper, to taste
    • 3 cups (500g) boneless chicken breast fillets, cooked and diced
    • 1 cup (200g) tomatoes, diced
    • 2 sticks celery, diced
    • 12-18 leaves lettuce
    • 1 avocado, peeled, stoned and sliced

    1. Place bacon in a large, deep frying pan and cook over medium high heat until evenly brown. Set asice to cool.
    2. In a medium bowl, prepare dressing by whisking together the mayonnaise, parsley, spring onions, lemon juice, Worcestershire sauce, salt and pepper.
    3. Add the chicken, tomato, celery and bacon then toss well to coat.
    4. Refrigerate until chilled. Serve over lettuce leaves and garnish with avocado slices.
