    This chicken recipe goes particularly well with rice or boiled potatoes. you can add more tarragon or garlic if you are a fan!

    Serves: 4 

    • 2 tablespoons olive oil
    • 500g cubed chicken breast
    • 150ml white wine
    • 2 cloves garlic
    • 2 tablespoons dried tarragon
    • zest of 1 lemon
    • 1 cup (250ml) double cream
    • 150g mature white chedder
    • 2 large teaspoons whole grain mustard

    1. Heat the olive oil in a pan and seal the chicken breast.
    2. Add the white wine, garlic, tarragon and the zest of 1 lemon and cook on a low heat for 15 mins.
    3. Increase the heat slightly and add double cream, stirring constantly.
    4. Add the cheese and stir constantly until the cheese has melted.
    5. Add the mustard.
    6. And cook for a further 5 mins, stirring constantly.
