Strawberry Apple Crumble

    When there's a glut of strawberries in summer this is a great recipe to use some up! Serve with cream or ice cream.

    Serves: 6 

    • 1 medium apple, peeled and chopped
    • 500g chopped strawberries
    • 2 tablespoons light brown sugar
    • 2 tablespoons water
    • 100g porridge oats
    • 100g plain flour
    • 100g butter
    • 100g light brown sugar

    1. Heat oven to 190 degrees C.
    2. Mix the apple, strawberries, 2 tablespoons sugar and water in a saucepan and place on a gentle heat. Cook until fruit has broken down to desired consistency, then place in the bottom of an oven proof dish.
    3. Mix the oats and flour in a large bowl. Add the butter in small chunks and rub in gently. Stir in the 100g sugar and rub in again.
    4. Sprinkle oats and flour evenly over the fruit and bake for approximately 20 minutes until the fruit starts to bubble up.
