Turkey and Mushrooms with Creamy Basil Sauce

A lovely way to serve turkey - pan seared with mushrooms and garlic and then served with a rich and creamy basil sauce. It's perfect for a Christmas dinner.

Ingredients
Serves: 4 

  • 1 tablespoon olive oil
  • 4 turkey breast fillets
  • 3 cloves garlic, finely minced
  • 12 button mushrooms, sliced
  • For the creamy basil sauce
  • 1 tablespoon flour
  • 1/2 tablespoon butter
  • 350ml reduced fat milk
  • salt and pepper
  • 1 tablespoon basil pesto
  • 25g cheddar cheese, grated

  1. Heat olive oil in large frying pan over a medium heat and add turkey steaks. Cook for 5 minutes then flip and add the garlic and mushrooms to the frying pan.
  2. While the turkey is cooking, make the basil sauce. In a small saucepan, melt the butter then add the flour and stir. Add the milk a little at a time to form a roux - don't stop stirring. Once the sauce thickens, season with salt and pepper and stir in the pesto and grated cheese.
  3. Serve the turkey and mushrooms over a bed of wild rice and spoon the sauce on top.
