Ingredients
Serves: 4
1 ripe pineapple, peeled, cored and cut into cubes
12 ready-to-eat dried apricots
2 teaspoons cardamom pods
grated zest of 1 orange
4 tablespoons orange juice
4 teaspoons honey
55 g good dark chocolate (at least 70% cocoa solids), grated
Preheat oven to 200°C. Place four 30 × 30 cm sheets of greaseproof paper on baking tray.
Divide pineapple cubes among paper squares. Add 3 apricots to each. Crush cardamom pods and extract seeds. Add to parcels. Sprinkle over orange zest and juice. Drizzle 1 teaspoon honey on top of each.
Wrap paper loosely round fruit and seal tightly. Bake for 20 minutes.
Place parcels on individual serving plates and unwrap them. Sprinkle grated chocolate into each parcel and serve.
