This easy dish uses parsley as the star ingredient, not just as a garnish, and it gives a fantastic flavour. You could also barbecue the chicken breasts. The parsley sauce can also be used as a dressing through a 4-bean mix or a potato salad.
My garden overflowing with parsley and I couldn't think what to do with so much of it. I cooked this dish for 5 people (doubling the recipe for guys portions) and it was a hit. The sauce tastes very strong by itself but settled down when added to the chicken. Highly recommended. - 19 Sep 2009

Used different ingredients. My griller was on the blink so I oven baked thigh fillets, pouring the oil off occassionally. Still fantastic. - 19 Sep 2009
