A great simple rice side dish which mixes rice with garlic, spring onions and fresh coriander. Delicious and healthy.

Serves: 4 

  • 3 teaspoons olive oil
  • 4 spring onions, sliced
  • 2 cloves garlic, crushed
  • 1 cup rice
  • salt
  • 1/2 cup chopped fresh coriander or flat-leaf parsley leaves

Preparation:5min  ›  Cook:15min  ›  Ready in:20min 

  1. Heat the oil in a medium saucepan over moderate heat. Add the spring onions and garlic and cook for 3 minutes or until soft.
  2. Add the rice, 2 1/4 cups water and a pinch of salt, then cook for 12 minutes until the rice is tender. Stir in the coriander.
