A great simple rice side dish which mixes rice with garlic, spring onions and fresh coriander. Delicious and healthy.
3 teaspoons olive oil
4 spring onions, sliced
2 cloves garlic, crushed
1 cup rice
1/2 cup chopped fresh coriander or flat-leaf parsley leaves
- Heat the oil in a medium saucepan over moderate heat. Add the spring onions and garlic and cook for 3 minutes or until soft.
- Add the rice, 2 1/4 cups water and a pinch of salt, then cook for 12 minutes until the rice is tender. Stir in the coriander.
