Garlic Dressing for Pasta

This is just like a salad dressing but it is actually best tossed with pasta! The garlic becomes quite mellow after being warmed in the oil.

Serves: 4 

  • 2 fresh bay leaves
  • 4 garlic cloves, thinly sliced
  • 5 tablespoons extra virgin olive oil
  • grated rind of 1 lemon
  • 4 tablespoons snipped fresh chives
  • 4 tablespoons chopped fresh parsley
  • 4 tablespoons chopped fresh tarragon, sage, marjoram or dill, or a mixture of fresh herbs

  1. Crease the bay leaves in half and place them in a small saucepan with the garlic. Add about 1 tablespoon olive oil and heat gently for 2 minutes or until the oil just begins to sizzle around the garlic. Remove from the heat.
  2. Stir in the lemon rind, then pour in the remaining oil. Set aside to infuse for at least 30 minutes.
  3. Remove the bay leaves and add the herbs. Toss the dressing over hot pasta and serve.

This was just sort of blah. Bland, not much taste, definately needed salt and pepper. Don't think I'll make again - 09 May 2013
