Garlic & cheddar mashed potatoes

Potatoes combine energy-giving complex carbohydrates with plenty of vitamin C, fibre and potassium. They're filling and, if sensibly prepared, low in fat.
1kg baking potatoes, peeled and thinly sliced
6 cloves garlic, peeled
1/3 cup buttermilk
3/4 cup shredded Cheddar cheese
1/2 teaspoon paprika
- Cook the potatoes and garlic in a saucepan of boiling water for 10 minutes or until tender.
- Drain and mash with the buttermilk, cheese, paprika and salt to taste. Serve immediately.
