Fruity melon and ginger juice

    Serves: 4 

    • 1 cup cloudy apple juice
    • 1 1-cm piece peeled ginger, sliced
    • ¼ rockmelon (cantaloupe or spanspek), seeded, peeled and chopped
    • ½ honeydew melon, seeded, peeled and chopped

    1. Heat the apple juice and ginger in a small saucepan until it comes to the boil. Turn off the heat and leave for 10 minutes. Strain and keep the juice.
    2. In a blender, place rockmelon, honeydew melon and strained apple juice. Blend until smooth. Chill until ready to serve.
