Fresh Apricots Poached In Syrup

Serve these golden poached fruits for dessert with custard, slices of sponge cake, or with ice cream, or enjoy them for breakfast with yoghurt.

Serves: 4 

  • 1/2 cup sugar
  • 1/2 teaspoon ground ginger
  • 1 vanilla bean, halved
  • 8 fresh apricots, peeled

Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

  1. Bring 1 cup water, the sugar, ginger and vanilla bean to the boil in a medium saucepan. Cook for 3 minutes.
  2. Add the apricots and reduce the heat to a low simmer. Cover the saucepan and poach the fruit for 10 minutes or until tender.
  3. Remove from the heat and cool the apricots in the syrup. Chill the fruit, still in the syrup, before serving.
