Fresh Apricots Poached In Syrup

Serve these golden poached fruits for dessert with custard, slices of sponge cake, or with ice cream, or enjoy them for breakfast with yoghurt.
1/2 cup sugar
1/2 teaspoon ground ginger
1 vanilla bean, halved
8 fresh apricots, peeled
- Bring 1 cup water, the sugar, ginger and vanilla bean to the boil in a medium saucepan. Cook for 3 minutes.
- Add the apricots and reduce the heat to a low simmer. Cover the saucepan and poach the fruit for 10 minutes or until tender.
- Remove from the heat and cool the apricots in the syrup. Chill the fruit, still in the syrup, before serving.
