Easy Chicken Quesadillas

    Quesadillas are an easy snack or light lunch that everyone will enjoy! Chicken is fried with capsicum and spring onion and served in tortillas with cream cheese and salsa. Yum.

    Serves: 4 

    • 4 skinless, boneless chicken breast fillets, cut into cubes
    • salt and pepper
    • 1 teaspoon olive oil
    • 200g spreadable cream cheese, like Philadelphia
    • 1 (300g) bottle of salsa
    • 8 large flour tortillas
    • 2 green capsicums, thinly sliced
    • 2 spring onions, thinly sliced
    • 250g grated Cheddar cheese

    Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Preheat oven to 180 degrees C.
    2. Season chicken with salt and pepper.
    3. Heat oil in large frying pan, sauté green capsicum and spring onion for 3 minutes. Add chicken and cook until chicken is no longer pink in the middle. Set aside.
    4. In a medium sized bowl, mix cream cheese and salsa until well blended.
    5. Spread cream cheese/salsa mix on 4 of the tortillas. Place cooked chicken, green capsicums and spring onions on top of mixture and cover with grated Cheddar cheese.
    6. Place remaining 4 tortillas on top and cook on a nonstick baking dish until cheese is melted and the top is golden brown.
    7. Slice into quarters, serve and enjoy!!!

    great easy recipe - I used leftover roast chicken and mixed the salsa and cream cheese with the chicken in the pan. Kids loved it!  -  03 Oct 2012


    My super fussy brother and sister loved this recipe. I used sweet chili philadelphia instead of the regular to give it a bit of zing.  -  30 Jan 2014
