In your quest for healthy foods, don't overlook the humble sardine, a rich source of protein, calcium and omega-3 fatty acids.

Serves: 4 

  • 1 small red onion, thinly sliced
  • 1/2 cup white wine
  • 2 tablespoons white wine vinegar
  • 1 bay leaf
  • Freshly ground black pepper
  • Salt
  • 4 slices woodfired bread or other crusty firm bread
  • 8 large canned sardines, drained
  • 1 tablespoon finely chopped fresh parsley
  • 1/2 lemon, cut into quarters and then into thin slices

  1. Place the onion rings in a medium bowl. Combine the wine, vinegar, bay leaf and a good grinding of pepper in a small saucepan and bring to the boil. Pour the liquid over the onions and leave to marinate for 1 hour. Drain.
  2. Toast the bread. Divide the onions among the bread slices and arrange 2 sardines on top of each. Sprinkle with the parsley and add a thin slice of lemon.

Did you know?

Rinsing canned sardines (handle them gently to avoid breaking them) will reduce their sodium content, which is often fairly high.
