Rob and Becky's Pimm's Lemonade

    On our honeymoon we stayed with some friends in London and they made us this common UK drink - now we can't stop making it! It is especially delicious on a hot, summer afternoon. The cucumber and mint are odd, but don't leave them out - they make this drink!

    Serves: 6 

    • 1 cup (250ml) Pimm's Original No.1 Cup
    • 2 litre bottle sprite or lemonade
    • 1 wedge cucumber (about the size of a finger)
    • 1 red apple, sliced
    • 1 orange, sliced
    • 1/2 fresh lemon, sliced
    • 1/2 fresh lime, sliced
    • Optional ingredients
    • 2-3 fresh pineapple rings
    • 2-3 fresh strawberries, sliced
    • 2-3 leaves fresh mint

    1. Mix all ingredients in a large pitcher (for big parties I even use a stockpot and serve with a ladle!). Serve chilled or over ice, if you are impatient, but it's better chilled.
    2. Notes: Adjust the amount of Pimm's and sprite or lemonade to your preferences. Pimm's is a sweet gin and as far as I've found and been told, there is not another product exactly like it. It is sometimes hard to find, but most liquor stores or bottle shops do carry it or they can get it. Enjoy!

    In a café in Brussels' Grande Place, I once ordered "Cocktail a dégustation", because real reason notwithstanding, it sounded like "Disgusting Cocktail", and I was curious. When the cocktail arrived with cucumber in it, I could hardly complain that I hadn't been warned.
