Welsh Rarebit with Egg

    My version of the delicious Welsh cheese on toast called Welsh Rarebit which includes egg yolks and Worchestershire sauce.

    Ingredients
    Serves: 2 

    • 2 tablespoons butter, melted
    • 2 tablespoons flour
    • 2/3 cup (170ml) milk
    • 1 cup grated cheddar cheese
    • 3/4 cup (185ml) brown ale
    • 1 teaspoon mustard
    • 2 teaspoons Worchestershire sauce
    • 2 egg yolks
    • salt
    • pepper
    • 4 slices of toast

    Directions
    Preparation:30min  ›  Cook:10min  ›  Ready in:40min 

    1. Combine the butter and flour in small bowl. Let cool.
    2. Bring milk to a boil then combine butter and flour mixture.
    3. Bring that mixture to a boil then add the cheddar cheese and remove from heat.
    4. In another small pot add the ale, mustard, and Worchestershire sauce.
    5. Stir on medium heat for about 5 minutes.
    6. Add the ale mixture to the cheese mixture.
    7. Season well with salt and pepper.
    8. Beat in the egg yolks.
    9. Spoon mixture onto pieces of toast then put in over under the grill until cheese bubbles.

    Mixture very tasty but a bit too runny to heap on the toast. Next time I'd cut down a bit on the liquids.  -  16 Apr 2013  (Review from Allrecipes UK & Ireland)

    Made a great lunch very tasty.. Replaced the beer with extra milk. Will use a bit less liquid next time to make it slightly less runny.  -  02 Jan 2018  (Review from Allrecipes UK & Ireland)
