This soup is more than just delicious—it's good for you! Onion-family vegetables offer cancer-fighting compounds and antioxidant flavonoids; they also seem to help lower blood pressure and levels of cholesterol.

Serves: 4 

  • 2 teaspoons olive oil
  • 3 cups diced onions
  • 6 spring onions, sliced
  • 3 cloves garlic, crushed
  • 1 teaspoon sugar
  • 2 teaspoons fresh thyme leaves
  • salt
  • 3/4 cup chicken stock
  • 1 cup low-fat milk

  1. Heat the oil in a large nonstick saucepan over low heat. Add the onions, spring onions, garlic, sugar, thyme and a pinch of salt, and cook gently for 10 minutes or until tender.
  2. Add the stock and 3/4 cup water and simmer, covered, for 5 minutes. Purée with the milk, then heat through to serve.
