Gluten and Dairy Free Pear Cupcakes

    These little cupcakes have the subtle (healthy!!) taste of grated pear and would you believe they are wheat-free and dairy-free.

    Serves: 8 

    • 100g rice flour
    • 1/2 teaspoon bicarbonate of soda
    • 1 teaspoon wheat-free baking powder
    • 50g brown sugar
    • 1 pear, grated
    • 4 tablespoons sunflower oil
    • 2 tablespoons golden syrup

    Preparation:10min  ›  Cook:25min  ›  Ready in:35min 

    1. Preheat oven to 190 degrees C.
    2. Sift together the flour with the bi-carb and baking powder. Add the sugar and the grated pear. Mix all together.
    3. Add the oil and golden syrup and beat all the ingredients together. Put into patty pans and bake in pre-heated oven for 25 minutes.

    This was my first attempt at gluten free baking so I wasn't sure what to expect. The cupcakes were very tasty but a bit too sweet for me. Next time I will use less golden syrup  -  24 Mar 2010


    Altered ingredient amounts. I used half the oil and half the golden syrup.  -  07 May 2011
