Gluten and Dairy Free Pear Cupcakes

These little cupcakes have the subtle (healthy!!) taste of grated pear and would you believe they are wheat-free and dairy-free.
100g rice flour
1/2 teaspoon bicarbonate of soda
1 teaspoon wheat-free baking powder
50g brown sugar
1 pear, grated
4 tablespoons sunflower oil
2 tablespoons golden syrup
- Preheat oven to 190 degrees C.
- Sift together the flour with the bi-carb and baking powder. Add the sugar and the grated pear. Mix all together.
- Add the oil and golden syrup and beat all the ingredients together. Put into patty pans and bake in pre-heated oven for 25 minutes.
This was my first attempt at gluten free baking so I wasn't sure what to expect. The cupcakes were very tasty but a bit too sweet for me. Next time I will use less golden syrup

Altered ingredient amounts.
I used half the oil and half the golden syrup.

The cupcakes are very tasty. I used half the oil and golden syup and they are deffinately sweet enough.
