Pineapple Pork Curry

    A Chinese inspired curry with your choice of beef, pork or chicken that is stir fried with pineapple, roasted garlic and curry powder. Enjoy with rice.

    Serves: 4 

    • 1kg pork, beef or chicken, sliced
    • 1 (432g) tin pineapple chunks
    • 1 tablespoon olive oil
    • 5 cloves of garlic, peeled
    • 1/2 onion, sliced
    • 1 tablespoon curry powder
    • 1 tablespoon dried thyme
    • 1/2 tablespoon paprika
    • 1/2 teaspoon salt
    • 4 tablespoons soy sauce
    • 1 tablespoon cornflour
    • 1/3 cup water

    1. Place garlic onto a large sheet of foil. Drizzle with a little olive oil, close the parcel and roast at 190 degrees C for 15 min
    2. Combine pork, pineapple with juice, onion thinly sliced, curry, thyme, paprika, salt, soy sauce and roasted garlic cloves whole in bowl and stir until evenly coated.
    3. Drizzle olive oil in large frying pan and preheat to medium-high. Add contents of bowl and cook on medium-high for 10 minutes. Combine cornflour and cold water then add to frying pan to thicken sauce. Reduce heat to low and simmer for 5 minutes.
