Place garlic onto a large sheet of foil. Drizzle with a little olive oil, close the parcel and roast at 190 degrees C for 15 min
Combine pork, pineapple with juice, onion thinly sliced, curry, thyme, paprika, salt, soy sauce and roasted garlic cloves whole in bowl and stir until evenly coated.
Drizzle olive oil in large frying pan and preheat to medium-high. Add contents of bowl and cook on medium-high for 10 minutes. Combine cornflour and cold water then add to frying pan to thicken sauce. Reduce heat to low and simmer for 5 minutes.
