Dry Fruit Raita

    A cooling side dish that complements Indian style currys.

    Serves: 6 

    • 3 cups (375g) natural unsweetened yoghurt
    • 1 teaspoon sugar
    • 1/3 teaspoon salt
    • 2 tablespoons raisins, soaked in boiling water for 20 minutes and drained
    • 2 tablespoons salted cashews, chopped
    • 1 tablespoon slivered almonds
    • 1 tablespoon shelled and chopped salted pistachio nuts

    1. Put the yoghurt into a bowl. Add the sugar and salt and mix well. Add the rest of the ingredients and mix well to combine. Serve chilled.
