    My friend gave me her recipe for chocolate muffins and banana muffins, so I combined both recipes and made this great banana and chcocolate chip recipe.

    Serves: 12 

    • 2 cups (275g) self raising flour
    • 2 tablespoons cocoa
    • 1/2 teaspoon salt
    • 1/2 cup (90g) caster sugar
    • 2 eggs
    • 1 cup (250ml) milk
    • 150g unsalted butter, melted
    • 2 ripe bananas, mashed
    • 140g dark chocolate chips

    1. Preheat oven to 180 degrees C. Grease or line a 12 hole muffin tray.
    2. Sift flour, cocoa and salt into a large bowl.
    3. In a separate bowl, beat eggs and sugar until light and fluffy. Stir in milk, butter and bananas.
    4. Return flour, cocoa and salt to the sieve and sift into the egg mixture. Quickly fold in, this takes about 15 seconds. Resist the temptation to over stir it.
    5. Fold in chocolate chips. Divide into the prepared muffin tray. Bake at 180 degrees C for about 15 minutes. The muffins are done when a skewer inserted into the centre comes out clean.
