Chilli-cheese quesadillas with tomato

Quesadillas make a terrific snack, starter or quick lunch. If you're serving them to children, decrease or omit the chillies.

Serves: 4 

  • 6 flour tortillas (20 cm)
  • 1 large tomato, seeded and finely chopped
  • 1 cup (120 g) coarsely grated cheddar cheese
  • 100 g drained pickled chillies, chopped
  • 1 tablespoon chopped fresh coriander
  • ¼ teaspoon salt
  • freshly ground black pepper, to taste

  1. Preheat oven to 120°C. Place 3 tortillas on a work surface. Sprinkle equally with tomato, cheese, chilli, coriander, salt and pepper. Place the remaining tortillas on top. Gently press the quesadillas to flatten.
  2. Coat a large non-stick frying pan with non-stick cooking spray. Heat over medium-high heat. Place one quesadilla at a time in the pan; cook until lightly browned on both sides and cheese is melted, 2 minutes per side.
  3. Transfer to a baking tray; place in the oven to keep warm. Repeat with the remaining quesadillas. To serve, cut each quesadilla into 4 wedges.
