Chicken salad with almond dressing

    Almonds are not only an attractive addition to salads, they are also excellent sources of fibre, minerals and vitamin E.

    Serves: 4 

    • 1/3 cup whole blanched almonds
    • 1/4 cup low-fat mayonnaise
    • 1½ tablespoons lemon juice
    • Salt
    • 2 cups diced cooked chicken
    • 2 celery stalks, sliced
    • 1 cup halved seedless red or green grapes
    • 2 cups shredded lettuce
    • 2 tablespoons flaked almonds

    1. Purée the whole almonds, the mayonnaise, lemon juice and a pinch of salt in a food processor. Transfer to a large bowl.
    2. Add the chicken, celery and grapes; toss well to coat with the dressing. Serve the salad on a bed of shredded lettuce and garnish with the flaked almonds.

    I enjoyed this chicken salad and liked that the almonds added some extra nutrition. I also thought the pureed almonds gave the dressing a thicker texture that made it different from other chicken salads. I would make this again  -  13 May 2013
