Chicken & White Bean Soup

    One of the leanest of all meats, skinless chicken breast is a superlative protein source for the health-conscious. B vitamins are a healthy bonus.

    Serves: 4 

    • 1 can (425g) cannellini beans, drained, rinsed and mashed
    • 2½ cups chicken stock
    • 1½ tablespoons no-added-salt tomato paste
    • 1 red capsicum, diced
    • 1 small onion, finely chopped
    • 3 cloves garlic, crushed
    • Salt
    • Tabasco sauce
    • 375g skinless, boneless chicken breast fillets, cut into small chunks
    • 2 tablespoons chopped fresh parsley

    1. Combine the beans, stock, tomato paste, capsicum, onion, garlic, a pinch of salt and a dash of Tabasco sauce in a medium saucepan. Bring slowly to the boil.
    2. Add the chicken and simmer for 6 minutes or until the chicken is cooked through. Serve sprinkled with the parsley.
