Bacon Chicken in Cheese Sauce

Chicken breasts boiled then wrapped in smoked bacon and baked until crisp. Smoothed with a creamy smoked cheese sauce. Enjoy with your favourite vegetables.

Serves: 4 

  • 4 chicken breasts, boneless and skinless
  • 4 rashers of smoked bacon
  • 1 knob of butter
  • 300ml of cream
  • 200g smoked cheese, diced
  • black pepper, to taste

  1. Preheat oven to 220 degrees C.
  2. Place chicken into saucepan of cold water and bring to boil allow to simmer for 10 minutes. Remove and wrap a piece of bacon around each breast, place in a baking dish then bake in preheated oven until bacon is cooked through, about 15 minutes.
  3. In a saucepan melt the butter over medium heat. Whisk in the cheese and cream, continue whisking until smooth. Season to taste with pepper and simmer gently until needed.
  4. Remove chicken from the oven and serve with cheese sauce poured over it. Serve with broccoli and new potatoes.
