1½ cups (375 ml) fresh or bottled carrot juice, chilled
⅔ cup (170 ml) freshly squeezed orange juice (2 oranges)
2 cm-thick slice peeled fresh ginger
- Combine carrot juice and orange juice in a bowl. Crush ginger in garlic press to make ½ tsp. Stir into juice mixture and serve. (If making ahead, stir just before serving.)
Many different vegetables can be used to scoop up dips. Try sticks of fennel or celery, whole endive leaves, the firm ribs of bok choy, slices of cucumber or small radicchio leaves.
