Carrot-broccoli slaw

    Almonds are a source of thiamine for your metabolism. Here's a simple and delicious way to use them.

    Serves: 6 

    • 3 tablespoons low-fat mayonnaise
    • 1 tablespoon white wine vinegar
    • 1 large bunch broccoli
    • 3 medium carrots, peeled and grated
    • ¼ cup (25 g) slivered almonds, toasted
    • 3 tablespoons chopped parsley
    • pinch of black pepper

    1. For the dressing, whisk the mayonnaise and vinegar in a small bowl.
    2. Cut off broccoli florets and reserve for another use. Peel the stalks, then grate in a food processor or by hand.
    3. Combine broccoli, carrot and dressing in a large bowl. Stir in almonds, parsley and pepper.
