Layered Christmas Trifle

    This delicious dessert is made of Swiss roll and tinned fruit salad over which is poured jelly and custard and allowed to set. A lovely treat for the Christmas table.

    Serves: 8 

    • 1 (24g) packet strawberry jelly crystals
    • 2 cups (500ml) dry sherry
    • 1 jam-filled Swiss roll, cut into 8 slices
    • 1 (410g) tin fruit salad, drained
    • 1 cup (250ml) prepared custard
    • whipped cream, as desired
    • fresh berries, for decorating

    1. Prepare the jelly, except replace the 2 cups cold water with the dry sherry. Let it cool but not set!
    2. In a trifle bowl, lay the Swiss roll slices, then top with the well-drained fruit salad.
    3. Pour the cool jelly mixture over the fruit salad and refrigerate the trifle to set.
    4. Once the jelly has set, pour the custard over the jelly and refrigerate to set.
    5. Once set, decorate with whipped cream and fresh berries as deserved.
