Potatoes combine energy-giving complex carbohydrates with plenty of vitamin C, fibre and potassium. They're filling and, if sensibly prepared, low in fat.
1 1/2 tablespoons vegetable oil
2 teaspoons chilli powder
1/2 teaspoon dried thyme
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
1kg baking potatoes, thinly sliced lengthways
- Preheat the oven to 210°C. Combine the oil, chilli powder, thyme, black pepper and cayenne pepper in a large bowl.
- Add the potatoes, tossing to coat. Place on 2 baking trays and bake for 30 to 45 minutes or until browned and crisp.
Did you know?
Starchy potatoes are best for baking, waxy ones are good for boiling and salads.
