    This salad is full of vitamin C, folate and fibre. With a velvety, low-fat blue cheese dressing, it's ideal if you're watching your weight.

    Ingredients
    Serves: 8 

    • 2⁄3 cup extra light sour cream
    • 2⁄3 cup natural fat-free yogurt
    • 1⁄4 cup (60 ml) cider vinegar
    • 1 tablespoon 97% fat-free mayonnaise
    • 1 tablespoon sugar
    • 1 teaspoon Tabasco sauce
    • 1⁄3 cup (50 g) crumbled blue cheese
    • 8 cups (about 700 g) finely shredded red and/or green cabbage
    • 4 granny smith apples, cut into thin wedges
    • 2 red capsicums, cut into slivers

    1. Whisk together sour cream, yogurt, vinegar, mayonnaise, sugar and Tabasco sauce in large bowl. Stir in blue cheese.
    2. Add cabbage, apples and red capsicums to bowl and toss to combine. Serve at room temperature or chilled.
