Simple cupcakes with vanilla as the only flavour. So easy it is from my school home economics days. No one can taste the cake under all the icing anyway.
2 cups (250g) plain flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup (240g) sugar
2/3 cup (170ml) milk
3 egg whites
1/2 teaspoon vanilla essence
- Preheat the oven to 180 degrees C. Line a cupcake tray with patty cases.
- Sift the flour, baking powder and salt, then add the sugar.
- Add the remaining ingredients and whisk thoroughly.
- Spoon mixture into the cupcake tray and bake for 20 minutes.
