Broccoli with Lemon Vinaigrette

    Heaping your plate with a generous portion of broccoli is an excellent strategy for healthy eating—but not if you drown it in butter or cheese sauce. Follow the example in this recipe and use a flavoursome olive oil-lemon dressing to flavour steamed broccoli.

    Serves: 4 

    • 1 teaspoon freshly grated lemon zest
    • 2 tablespoons lemon juice
    • 1 tablespoon extra-virgin olive oil
    • 2 garlic cloves, crushed
    • pinch chilli flakes
    • freshly ground black pepper to taste
    • 1 large broccoli, cut into florets
    • 1 tablespoon toasted flaked almonds

    1. Whisk lemon zest, lemon juice, oil, garlic, chilli and black pepper in a large bowl.
    2. Boil, steam or microwave broccoli florets until crisp-tender. Add to the bowl with lemon dressing and toss to coat well. Top with almonds. Serve immediately. (The lemon juice will cause the broccoli to discolour.)

    Too strong flavour, with too much lemon juice used.  -  30 Jan 2016


    Too tart and too much garlic, was disappointing. In order to try and make it palatable I added 2 Tbsp. of Balsamic Vinegar and then 1 Tbsp. of Sugar and whisked them into the mixture. After tossing the broccoli in the 'improved' vinigarette, it was edible.  -  07 May 2013


    A bit too much garlic for me especially because it is raw. Overall it had a strong lemon flavour.  -  20 Apr 2012
