Blackberry fool is such an easy to make dessert with no cooking required. You will love the berry flavour and thick creamy texture.
2 cups fresh or frozen blackberries
1/2 cup caster sugar
1/2 cup reduced fat sour cream
1 cup low fat evaporated milk, chilled
8 whole blackberries for garnish
almond bread, optional
- Purée the 2 cups of blackberries and the sugar in a food processor. Stir in the sour cream.
- Whip the evaporated milk in a medium bowl until stiff peaks form. Fold into the blackberry mix and pour into 4 serving dishes. Chill for 30 minutes.
- To serve decorate with the reserved whole blackberries, then serve with slices of almond bread.
