Blackberry fool is such an easy to make dessert with no cooking required. You will love the berry flavour and thick creamy texture.

Serves: 4 

  • 2 cups fresh or frozen blackberries
  • 1/2 cup caster sugar
  • 1/2 cup reduced fat sour cream
  • 1 cup low fat evaporated milk, chilled
  • 8 whole blackberries for garnish
  • almond bread, optional

  1. Purée the 2 cups of blackberries and the sugar in a food processor. Stir in the sour cream.
  2. Whip the evaporated milk in a medium bowl until stiff peaks form. Fold into the blackberry mix and pour into 4 serving dishes. Chill for 30 minutes.
  3. To serve decorate with the reserved whole blackberries, then serve with slices of almond bread.
